After checking out of Imani Country House, your first destination will be the organic farm where “Amor é Cego!” olive oil is produced, on the outskirts of Évora. You will be welcomed by the producers and invited to discover the artisanal process of olive oil production, from the olive tree to the mill. The visit culminates in a guided tasting of extra virgin olive oils, held in an absolutely unique setting: in the shade of an olive tree that is over two thousand years old, whose grandeur and serenity symbolically encapsulate the essence of this entire trip—connection to the land, timelessness, and truth. When is the best time to visit Portugal?
